At Vienna Coffee Company, we’re suckers for a good origin story, and this one is all about uncompromising standards. Our partners at Deeper Roots have worked with Kinini since 2018, but a 2023 visit truly revealed their obsession with quality. When Jacquie, the powerhouse behind Kinini, was shown a retail bag with two tiny, barely perceptible defects, she didn’t just shrug it off. She immediately called her entire staff together to eliminate the issue on the spot. That’s not just business, that’s the Kinini way.
This specific lot comes from the Tubehoneza Farmer Group, a women-run collective in the Rulindo region. Growing at a staggering 2200 meters, these cherries undergo a meticulous Anaerobic Natural process.
What is Anaerobic Natural Processing?
After picking the coffee, it immediately goes into sealed barrels to keep oxygen out, where it undergoes its initial fermentation. After that’s finished, it’s dried on a raised bed just like a typical natural processed coffee would be. Through years of experimentation, they’ve mastered the art of drying on raised beds with constant monitoring. At Kinini, "good enough" simply doesn't exist.
The result? A medium roast that’s absolute magic. Expect a juicy green apple acidity paired with bright citrus and a delicate, floral jasmine finish. It’s the perfect "adventurous" everyday cup, complex enough to impress your most caffeinated friends, but balanced enough to be your daily go-to.
