In this blog, we’re traveling (by cup) to the lush highlands of Chiapas, Mexico, to discover one of our favorite single-origin coffees, Organic Mexico Chiapas.

A Coffee Grown in Harmony with Nature

Mexico ranks as the 9th largest coffee producer in the world, yielding over 515 million pounds annually, and is the second-largest producer of certified organic coffee, right behind Peru. Nearly 17% of all coffee grown in Mexico is certified organic, and our Organic Mexico Chiapas is proudly among them.

This coffee grows in and around the El Triunfo Biosphere Reserve, a breathtaking natural sanctuary in southern Chiapas. El Triunfo is home to one of Central America’s last cloud forests and thousands of protected plant and animal species. All coffee cultivated here is shade-grown, meaning the native forest canopy shelters the coffee trees, preserving biodiversity and producing complex, flavorful beans.

The Sierra Azul Cooperative

Our Chiapas coffee comes from the Sierra Azul Cooperative, a collective of over 100 small-scale farmers who each tend plots averaging between five and twelve acres. Together, they are committed to environmental stewardship and exceptional quality. Their shared dedication results in a cup that’s as sustainable as it is satisfying.

The Flavor Profile

Coffees from Mexico are known for being light to medium-bodied, smooth, and balanced, often with notes of chocolate, roasted nuts, and gentle sweetness. The Chiapas region, in particular, delivers a more intense flavor with a savory depth that comes from unique processing methods. In our roast, you’ll find tasting notes of Cocoa, Hazelnut, and Blackberry, a reflection of both the region’s rich soil and the cooperative’s expertise.

From Chiapas to Your Cup

At Vienna Coffee, we roast our Organic Mexico Chiapas to a medium-light level to highlight its natural brightness and sweetness. It’s also a key component in one of our most beloved blends: Thunderhead Espresso. In fact, this coffee makes up 60% of the blend, paired with Organic Sumatra to create the smooth, bold flavor that defines so many of our cappuccinos, lattes, and Americanos.

Our Thunderhead Americano is a personal favorite, a simple yet powerful showcase of the balance between body, sweetness, and clean finish that our roasters work hard to achieve.
