Introducing: Single Origin Colombia Tolima

Tolima is one of Colombia's most established coffee-producing regions, and its reputation is well-earned. Situated in the central Andes, the department's highlands offer the elevation, climate, and agricultural tradition that specialty coffee demands. This lot comes from the growing areas surrounding Ibagué, Tolima's capital city — a hub for the region's coffee trade and home to the infrastructure that makes a coffee like this possible.

Pergamino Coffee Exporters works with more than 50 smallholder growers in the area, each delivering their harvested cherry to a logistics partner in Ibagué. There, a warehouse and cupping lab serve as the quality checkpoint between farm and export. Every lot that passes through is analyzed — cupped and evaluated for quality and consistency before it's approved for shipment. It's a straightforward but meaningful step. Rather than consolidating lots of unknown origin, Pergamino's model ensures that what leaves Ibagué has been vetted, verified, and held to a standard.

We first worked with this coffee in 2024 and it became an immediate favorite. The cup is grounded in brown butter richness, layered with pecan nuttiness, and kept bright by a mild citrus acidity that prevents the sweetness from going flat. Medium body, clean finish. We roasted it at medium to let those flavors speak for themselves — this isn't a coffee that needs the roast to do the work. It needed space, and that's what we gave it.

The result is a daily drinker in the truest sense: approachable enough for every morning, complex enough to stay interesting. We're glad to finally have it on the shelf, and we hope you'll give it a try.
