ROAST LEVEL
Coffee has been part of Mexico’s agricultural landscape since the 18th century, and it remains deeply tied to land, community, and tradition. In Puebla, coffee is grown on steep high-altitude plots farmed largely by smallholder and indigenous producers. These families have cultivated coffee for generations, relying on it as one of the few viable cash crops in the region.
Historically, Mexico’s coffee trade has been shaped by intermediaries who aggregate coffee from household-level farms, which has often limited transparency and reduced farmer margins. In recent years, new regional associations and producer groups have begun building more direct supply chains that create stronger connections between growers and specialty markets. This coffee comes from Red de Quimixtlán, a producer group working to strengthen those pathways while maintaining quality and consistency.
The result is a coffee that reflects Puebla’s growing specialty identity. It is rooted in long-standing agricultural tradition while moving toward a more transparent and farmer-focused future.
