A Happy Accident of Nature
Most coffee cherries contain two seeds that develop side by side, forming the familiar flat-sided coffee bean we all know. But every once in a while, only about 5 to 7 percent of the time, something unusual happens: just one seed develops inside the cherry. That single, rounded bean is what we call a peaberry.
This natural anomaly occurs during the plant’s fertilization process. In the case of coffea arabica, each flower contains both male (stamens) and female (pistils) reproductive organs. Normally, both ovules inside the flower are fertilized, producing two seeds. But when only one ovule is fertilized, whether due to genetic quirks, pollen issues, or an imperfect fertilization process, a peaberry forms.
Why Does It Matter?
Peaberries are smaller, rounder, and often denser than typical beans. Some roasters believe this unique shape allows for more even roasting and, potentially, a more concentrated flavor. While the science is still up for debate, peaberries are often sorted out and sold separately as a premium offering, treasured for their rarity and the intrigue of their origin.
