The largest, most uniform grade of Colombian coffees is the Supremo. Our variety is roasted “Viennese” to develop the full body and powerful aroma of this big classic coffee. With a name familiar to many because of the country’s marketing icon, Juan Valdez, Vienna Coffee’s darker version may surprise you due to its more subdued, more drinkable acidity.
Bag size: 12 oz.
Tasting Notes: Smooth body, lemony sweet acidity, and cane sugar and lemony aroma.
The same fine outfit that sends us the exceptional, dry processed Moka Harrar coffee exports this wet processed coffee from the southern Yirgacheffe region. This is one of the world’s most distinctive coffees. This bean exhibits substantial body and rich, soft-toned acidity with a floral, fruity character to its flavor. We roast it on the light side of “Full City” to retain its floral notes. One of our regular customers exclaimed, “This coffee tastes as good as coffee smells”. We think you’ll agree.
Bag size: 12 oz.
This blend was created for everyday enjoyment. Mild acidity, with medium body and a clean finish result from a base of medium dark "Viennese" roasted Central American beans. Balance and flavor are contributed by a bit of medium roasted beans from Africa and the Americas. This blend is predominantly a Viennese Roast and thus a little darker than most East Tennesseans grew up with. You will be delighted by the difference!
Bag size: 12 oz. or Box of 12 iFill cups
Tasting Notes: Jasmine, white tea, peach
The Bressani family has operated the beautiful Finca San Jeronimo Miramar for over 100 years. To call it just a coffee farm would be selling it short. Not only are some fantastic coffees being grown and cared for here, but also beautiful jersey dairy cows, honeybees, and exotic tropical fruits. Sitting high above all of this is a gorgeous, protected natural reserve. This forest is the lifeblood of the farm as its volcanic terrain feeds the farm’s natural fresh water springs and powers the farm’s entire processing facilities with hydroelectric power. We started visiting this farm in 2013 and have enjoyed building a relationship with this family farm.
Our biggest seller. A full-bodied blend of African, Central and South American beans. It has the full-bodied mouth feel of the Africans and a dark structure contributed by dark roasted Central American beans. Finally, a rich acidity is added with a medium roasted Colombian bean.
Bag size: 12 oz.
Tasting Notes: Hazelnut and almond sensation combined with a smoky sweetness and peppery finish. Low-to-medium brightness, medium body and roasted Full City.
Bag size: 12 oz.
Massive and serene, Rich Mountain stands between Cades Cove and the Little River Valley. This coffee, named for the 3686 ft. tall peak, brews up strong, but smooth. Colombian Supremo beans contribute acidity and body while high grown Central American beans temper the acidity and add a sweet aroma. More drinkable than the popular 100% Colombian coffee: those who like a rich aromatic cup will favor this blend.
Bag size: 12 oz.
This coffee exhibits the full body and low-toned, rich acidity characteristic of this South Pacific Island’s beans. It exhibits a bit of a “wild” taste when roasted light, so we go just past medium to a “Viennese” style to retain a hint of wildness, yet tone down the acidity and develop the body and flavor more fully. This is a favorite among people who know their coffees.
Bag size: 12 oz.
This Fair Trade, Organic, and Rainforest Alliance Coffee, is a coffee you just have to try with its nice heavy body, and is earthy, consistent, and clean. We roast it at Full City Roast. This coffee not only tastes rich and delicious, but it is also great for the farmers who pick and process it and the earth that it grows in.
The Permata Gayo Cooperative is located in the Gayo region in Western Sumatra, Indonesia. The area suffered heavily during the Aceh conflict between 1976 and 2005. The 2004 tsunami brought a peace accord and the end of the insurgency; however many groups that were established before the natural disaster were never able to re-form. In response, Permata Gayo was founded in 2006 after many years of planning and community organization. Permata Gayo has been a leader in clean and consistent quality since its beginning despite the challenges of geography, infrastructure, and competitive local pricing.
Today the cooperative is made up of roughly 3,100 producers from 34 different rural villages in Aceh, where 13 different languages are spoken. Each farmer harvests the red ripe cherries before turning them into their village’s “kolector” who brings the coffee to be processed. The kolector will then depulp the coffee, let it ferment in a pile for 15-20 hours, and wash off the mucilage. It is dried down to 50% humidity and delivered it to the main collection warehouse in the Bener Merah District, near Takengon. The warehouse then dries it to 40% humidity before hulling the coffee, a process called “wet-hulling.” Then the coffee is dried down to 13% humidity. This unique “semi-washed” process is one of the factors that gives Sumatra beans their dark bluish green color and the coffee its earthy, tobacco characteristics.
Permata Gayo uses its Fair Trade Premiums each year for projects voted on by the General Assembly meetings in a democratic process. Some funds have gone to help in the areas of technical assistance within villages while other years the FT Premium has been used to preserving the local culture, in music, song and dance. In 2012 Permata Gayo organized classes for adults and children on traditional dances and songs in order to preserve their cultures that were being forgotten or ignored by new generations. Permata Gayo has a strong focus on women’s empowerment, environmental preservation, and sustainable coffee production.

This blend of specialty grade beans became the signature blend of Vienna Coffee House in Cooper City, Florida. It is roasted “full city” to retain the aroma and individual character of each bean, while providing a rich, nutty flavor from the combination. Beans from Central and South America, Africa and Indonesia contribute to a very balanced, complex cup of coffee.
Bag size: 12 oz.
This house decaf is a medium roasted blend of three coffees, each decaffeinated using the mountain water decaffeinating process. This blend presents a medium cup strength, noticeable body, peak acidity and a mild, well-rounded flavor. Roasted to max out both aromas and body. Remarkably good!
Bag size: 12 oz. or a Box of 12 iFill Cups
Try a drink (slightly modified) from the Aztec God's... Aztec Chocolate
(Brazilian coffee infused with Chocolate and cinnamon hazelnut). In the 1200 in Aztec Culture, the Aztecs attributed the creation of the cocoa plant to their god Quetzalcoatl who, descended from heaven on a beam of a morning star carrying a cocoa tree stolen from paradise. In both the Mayan and Aztec cultures cocoa was the basis for a thick, cold, unsweetened drink called xocoatl… believed to be a health elixir. Since sugar was
unknown to the Aztecs, different spices were used to add flavor, even
hot chili peppers and corn meal were used!
Aztecs believed that wisdom and power came from eating the fruit of the cocoa tree, and also that it had nourishing, fortifying, and even aphrodisiac qualities. The Aztec emperor, Montezuma drank thick chocolate dyed red. The drink was so prestigious that it was served in golden goblets that were thrown away after only one use. He liked it so much that he was purported to drink 50 goblets every day! In fact, The cocoa beans were used
for currency. When the Aztecs conquered tribes, they demanded their payment in cocoa!
Therefore, we added a little Vienna Coffee to the mix and came up with Aztec Chocolate flavored coffee. Enjoy!
