Tasting Notes: Dark chocolate with a nutty finish and a creamy body

This fine coffee compares to a slightly lighter bodied Sumatra coffee or the famed Blue Mountain, from Jamaica. Toraja Sapan Minanga is grown in the Sapan Minanga region which is on the island of Sulawesi, once known as the Dutch colony Celebes. This particular coffee is grown at very high altitudes which makes it very sought after. Since this coffee is grown on small family plots, the area has a diverse shade canopy of indigenous foliage and crops that the families can also sell like citrus and bananas.

This region is home to the Toraja who are an ethnic group of people who are known for their ritualistic religion ties and their steep peeked houses called tongkonan.
