The quality of great coffee starts with the green beans. Commercial quantities of green coffee beans come in two species - Arabica and Robusta. Vienna Coffee Company buys only the highest quality, 100% Arabica "specialty" grade green coffee beans directly from importers in New York, Miami and New Orleans. This highest quality green coffee can only be produced by hand picking ripe coffee cherries and careful processing and drying of the coffee “seeds”. Our coffees come to us through Beneficios (processing mills) whos owners are often a co-operative of the farmers themselves.
We select the beans after sampling and "cupping" each new crop and comparing notes with the "cuppers" within the import houses. After selecting the individual bean origin countries and estates, we blend and roast the beans right here in Maryville in small batches of no greater than 33 pounds (15 Kilos) per batch. Our blends are designed with a specific taste profile in mind and have been sampled extensively to determine what customers are likely to prefer. We can also custom blend and private label new coffees to address the specific tastes of a client.
Arabica beans are generally grown at higher elevations than the Robusta species. The best Arabica beans grow at 3,500 to 7,000 feet. Cooler weather at these higher elevations causes the beans to take longer to mature, intensifying the wonderful flavors that we seek. These beans are more expensive because the plants yield less coffee per year and are more difficult to pick at the higher elevations.
Green coffee has a shelf life of up to two years whereas roasted beans will stay fresh for only a few weeks. After that, it starts to lose its delicate aromas and its flavor oils begin to stale. Ground coffee should be used within two days as its flavor rapidly deteriorates. Most beans you are currently buying, unless direct from a coffee roaster or their first hand retailers, have passed their prime.
At the Vienna Coffee Company, we roast daily to produce only what we will sell that week. We also recognize that each origin - in fact, each crop - of coffee requires special attention. Unlike bigger companies, we don't roast each of our coffees the same way. We keep a "roast profile" - exact directions about the time and temperature changes - for each coffee from different sources. Beans roasted with different roast profiles taste dramatically different, in much the same way that two steaks, which may look the same on the outside, taste different if they are cooked for different lengths of time at different intensities of heat.
We buy decaffeinated beans that have been processed using no chemicals. We supply decaffeinated coffees from only the SWISS WATER® Decaffeinated process and are a licensed SWISS WATER® Decaffeinated Coffee Inc. vendor in east Tennessee.
We roast a growing line of sustainable coffees as well. Several of our offerings carry certification as Organic, Fair Trade, Rainforest Alliance, Smithsonian Migratory Bird Center “Bird Friendly” and/or shade grown. Each of these designations means that the coffees’ producers have embraced environmental and economic sustainable practices in every stage of production. A growing number of consumers are seeking these coffees in order to “make a difference” with their coffee dollars. Our Flavored coffees all use "specialty" grade coffees as well and are carefully blended with custom natural and artificial flavoring elixirs. All flavors are sugar free, fat free essences that yield a sumptuous coffee flavor with only subtle hints of the other gourmet ingredients. All are FDA approved and certified Kosher. Special seasonal blends and/or flavors are made available from time to time.
We are inspected by the Tennessee Department of Agriculture and are currently pursuing certification as a manufacturer of certain organic products in accordance with the organic standards of the US Department of Agriculture.
