The SHB stands for “Strictly Hard Bean”, a designation reserved for coffees grown at an altitude of at least 3,900 feet above sea level. The higher elevation forces the coffee tree to work harder to produce fruit. The result is a more developed flavor and greater aromatic complexity. Vienna Coffee’s version comes from the Huixoc Estate and is certified by the Rainforest Alliance to be grown and processed using methods that are protective of the ecosystem in Guatemala’s Huehuetenango highlands. We combine a dark roasted portion blended with a lighter roast of the same bean. This approach leaves the cup wildly aromatic and exhibits all the distinctive acidity, full body and big complex flavor that the best Guatemalan coffees can offer.
